Why these settings

Your Mustang GT's British 80s model approximates the Plexi voicing. The Epiphone's humbuckers are hotter and warmer than EVH's single-coil-sized humbucker, so I dropped treble from 7 to 6 and kept mids forward at 7 to retain that vocal bark. Gain at 8 (not maxed) compensates for your pickups' higher output while preserving note definition.
